The 2000 Chardonnay
was fermented in new French oak barriques then matured on the yeast lees
for 10 months. During this time natural malolactic fermentation occurred
which had contributed a smooth creaminess to the palate texture, with a
butterscotch aroma and flavour. This wine was bottled mid 1999 and will
benefit from further maturation. Suitable for a range of cuisines but especially
good with shellfish and crustaceans.
