Most chefs are still climbing the Chef ladder in restaurants & hotels, at 25 years of age, but not Daniel Airoldi. This young gun is currently developing his cooking website danielskitchen.com.au, his range of produce and working as Head Chef at Taylor's Waterfront Restaurant on Victoria's picturesque Phillip Island.

Daniel's career choice was always going to be determined by destiny. His father, brother and uncle were all Chefs, and his mother is a brilliant cook.

His cooking website had already sparked some serious interest, and Daniel is still developing it with interactive video footage and a "how to" section on basic cooking techniques. It's all about making cooking easy and fun, so the emphasis is on simplicity but with style. Daniel has also produced a range of specialty goods called Daniel Airoldi French Country style products, which he sells in various places across Victoria. The range includes jams, jellies, marmalade, chutney and olive oils; all made the way his mother used to when he was growing up.

And where did the career of this passion young Frenchman begin? His mother's kitchen if you want to get technical, but from a resume point of view, his first stop was les Gourmandises de Paunat, where he was first apprenticed. It was at le Leclerc in Port St Foy that Daniel honed his pastry & chocolate making skills. But after a couple of seasons as Head Pastry Chef at Longueville House Hotel in Mallow County Cork, Ireland, he snapped up the position of Head Pastry Chef with our very own Jacques Reymond in Melbourne.

Daniel was a Guest Chef in the Good Food & Wine Show's Vogue Restaurant Showcase in June, has a feature recipe page in Herald Sun's Home magazine in July, will wow Tasmanina at a cooking class at the Drysdale Insitute in August, is an attraction at this year's Royal Melbourne Show in the Safeway Kitchen with his witty demonstrations in September, and will be Guest Chef at Warrenmang Winery in February 2006. Let's hope he has time for those gorgeous Christmas puddings and cakes of his!
